Verjuice – deriving from the french verjus, formerly “vert jus”, meaning juice from green grapes. Verjuice is a souring and seasoning condiment that has been around for centuries, but nowadays it is also an excellent alcohol free beverage. Wine estates contributing to the quality of their grapes by cluster halving and green harvest reduction can make use of these grapes that have not yet stored sugar. After pressing the juice is pasteurized and filtered. Blütenmuskateller is one of the fungus-resistant PIWI varieties and grows in our garden above the cloister cellar being part of Ried Spiegel.
A fragrant bouquet offering aromas of gooseberry and black
tea promising lively zestiness. This continues on the palate showing mouthwatering tannins and a firm acidic grip with lingering citric and herbal notes. This is a thirst quencher, but also a unique food companion.
